Atta Pizza Base Recipe

A wholewheat atta pizza base that stays crisp, with the exact hydration, resting and pre-baking steps for both an oven and a home tawa.

An atta pizza base works when you push the water to about 70 percent of the flour weight, rest the dough an hour, stretch it with your fingertips instead of a rolling pin, and pre-bake it 5 to 6 minutes before topping. That gives a crisp bottom and a chewy rim, not a dry biscuit.

Most wholewheat pizza fails the same way: the cook treats atta like maida and bakes it once. The bran drinks the water, the sauce soaks in, and out comes a cracker with toppings on it.

Why does atta behave differently from maida in a pizza dough?

Atta carries the bran and germ, so it absorbs far more water than refined flour and has less gluten available to build structure. Under India's cereal standards, wheat flour (atta) must carry not less than 6.0 percent gluten on a dry basis, while maida must carry not less than 7.5 percent. More water demand and less gluten means more liquid and more resting time, not less.

ICAR-IIWBR's reference on Indian wheat notes that bread making wants hard wheat above 13 percent protein, while chapati wheat sits in the 10 to 13 percent band. Indian atta is milled for chapati. CressPure Premium Atta tests at 11.7 g protein per 100 g, squarely in that band, so chase a thin crisp nutty base rather than a Neapolitan rim. Bran also cuts gluten strands as you work, which is why the fix for tearing is time, not force, exactly as in kneading atta for soft rotis and wholewheat atta bread.

What are the exact ingredients for an atta pizza base?

This makes two bases of about 25 cm. Weigh the flour if you can.

Ingredient Indian measure Grams / ml
Atta (100% Sharbati wheat) 2 cups 250 g
Warm water, about 40 C 3/4 cup + 2 tbsp 175 ml
Instant dry yeast 1 tsp 3 g
Sugar 1 tsp 4 g
Salt 3/4 tsp 5 g
Oil or olive oil 2 tbsp 25 g
Fresh curd (optional) 1 tbsp 15 g

175 ml of water to 250 g of flour is 70 percent hydration, against 58 to 62 percent for maida. Use maida quantities with atta and the dough looks right while kneading, then bakes like a brick.

How do you make the dough, step by step?

Active time is about 12 minutes and the rest is waiting. Do not cut the first rest below 60 minutes, because that is when the bran finishes absorbing water and the dough stops feeling sticky on its own.

  1. Mix yeast and sugar into the 175 ml warm water. Leave 5 minutes until cloudy.
  2. Mix atta and salt in a wide bowl. Pour in the yeast water and the curd.
  3. Bring together with a spoon, then hands. It will feel wet and shaggy. Do not add flour.
  4. Knead 8 minutes: push with the heel of the palm, fold, turn a quarter. Stickiness drops sharply after minute four.
  5. Add the oil and knead 2 minutes more, until it stops sticking to your palm.
  6. Cover with a damp cloth and rest 60 to 90 minutes until nearly doubled. Mumbai humidity needs 60 minutes; a Delhi winter needs 2 hours.
  7. Knock the air out, divide in two, roll into tight balls, rest 15 minutes covered. Skipping this second rest is the commonest cause of tearing.

How do you stretch an atta base without tearing it?

Press from the centre outwards with your fingertips on a lightly floured surface, rotating as you go, and leave the outer 1.5 cm thicker. Do not finish with a rolling pin. A pin flattens the gas bubbles you spent an hour building, and atta has too little gluten to recover from that.

If the dough springs back, wait 5 minutes. The gluten is tight, and pushing through a tight dough is what tears it. Aim for 3 to 4 mm in the middle; thinner and the base will not hold sauce without going soggy.

How do you bake an atta pizza base in an oven?

Preheat to 250 C with the tray or stone inside for a full 30 minutes, pre-bake the naked base 5 to 6 minutes, then top it and bake 7 to 9 minutes more. The hot surface does most of the work on the bottom crust.

  1. Preheat to 250 C with the tray inside for 30 minutes. A cold tray is the difference between crisp and pale.
  2. Slide the stretched base onto the hot tray. Bake 5 to 6 minutes until it firms and speckles.
  3. Spread sauce thinly, leaving the rim clear. Add cheese and toppings.
  4. Return to the top rack for 7 to 9 minutes at 250 C, until the cheese blisters at the edges.
  5. Rest 2 minutes on a wire rack, not a plate. Trapped steam softens a crisp bottom.

How do you get a crisp bottom on a home tawa?

Use a heavy iron tawa, preheat it dry on high for 5 full minutes, cook the base covered on medium 3 to 4 minutes, flip, top the cooked side, cover and finish on low for 6 to 8 minutes. The lid melts cheese without an oven.

Oven Tawa
Heat 250 C throughout High 5 min, then medium, then low
Pre-bake 5 to 6 min naked 3 to 4 min covered, first side
Finish 7 to 9 min topped 6 to 8 min covered, low flame
Total per base 13 to 15 min 10 to 12 min

Do not oil the tawa first, because oil fries the bottom soft. Keep the flame at medium once the base is on, since high heat scorches bran before the centre sets. Same heat discipline as tandoori roti on a tawa.

Can you make the dough ahead?

Yes. It keeps 48 hours covered in the fridge and improves for the first 24, because cold fermentation builds flavour. Pre-baked bases freeze for a month and bake from frozen at 250 C with 2 minutes added. Damp flour ruins your hydration, so read storing atta in humid cities.

The difference test: what to watch for

Lift the pre-baked base at the six minute mark and look underneath. Good atta gives a dry, evenly speckled bottom that stays rigid when you tilt it, and the torn edge shows small open holes rather than a solid grey band. If the underside is damp, the centre sags and the crumb looks closed, the flour is holding too much moisture or was milled hot, and its gluten cannot trap gas.

Frequently asked questions

Can I make an atta pizza base without yeast?

Yes. Replace the yeast with 1/2 tsp baking soda and 1/4 cup (60 ml) fresh curd, drop the water to 150 ml and rest the dough 20 minutes. The base comes out thinner and more cracker-like, closer to a crisp thin crust than a chewy one. Bake at 250 C as usual.

Why does my wholewheat pizza base turn out hard?

Almost always too little water or too much rolling. Atta needs roughly 70 percent hydration, which is 175 ml of water to 250 g of flour. A rolling pin crushes the bubbles that give lift, and baking below 220 C dries the base before it sets.

What oven temperature is right for wheat pizza in India?

250 C, the top of most Indian home ovens and OTGs. If yours maxes at 230 C, use that and add 2 to 3 minutes at each stage. Below 200 C the base dries out before the cheese melts and the crust goes biscuit hard, whatever flour you used.

Can I use the same dough for garlic bread or calzone?

Yes. For garlic bread, roll to 8 mm, bake at 250 C for 9 to 10 minutes and brush with garlic butter as it comes out. For a calzone, stretch to 4 mm, fill one half, seal with a fork and bake 12 to 14 minutes at 230 C so the filling heats before the crust colours.
